
Mapping the pork value chain in the Oncativo region and professionalizing the cured meats industry
The project carries out a comprehensive survey and mapping of the players in the pork value chain in the Oncativo region, with a special focus on cured meats, to strengthen the industry's organization, professionalization and coordination.
Summary
The Clúster de la Cadena Porcina de Oncativo (CCPO), a mature cluster formally established and active since 2014 with a track record of coordinating PROSAP/UCAR projects, carried out a two-pronged project to revitalize its institutional base and professionalize the craft of making cured meats, with the long-term strategic goal of securing a Designation of Origin for Oncativo cured meats.
The first pillar was a new mapping and outreach effort among cluster stakeholders. It included a full survey of current and potential members, with questionnaires tailored to each link in the chain (corn growers, feed, animal health, meatpacking plants, retailers, transportation, packaging); a media relaunch in local Oncativo outlets (downtown screens, TV, radio) and provincial ones (Agroverdad, Campo Directo); an institutional launch event with a strategy workshop focused on food safety; QR-code identification stickers at member companies' points of sale; and a dedicated website for the industry job board.
The second pillar focused on technical training in the craft. It delivered an in-person, 30-session course in making cured and salted meats under Good Manufacturing Practices, including the purchase of equipment (boards, knives, meat inputs and ingredients for 50 kg of cured meats), local media coverage, a graduation ceremony and the inclusion of graduates in the cluster's job board.

Main objective
Strengthen and consolidate the Clúster de la Cadena Porcina de Oncativo by expanding its map of participating stakeholders and providing technical training to its people and member companies, building the institutional and productive capacity needed to move toward a Designation of Origin for Oncativo cured meats.
