
Córdoba holds 25% of Argentina's hog inventory and leads the country in animals sent to slaughter (28.7% of the national total), but the province's pork value chain shows high genetic variability and uneven productivity. The Oncativo Pork Value Chain Cluster (CCPO) is running an ambitious project to become a replicable pilot hub for premium pork production, by systematically introducing Duroc-Jersey genetics and then scaling the model to the north and south of the province.
The evidence behind the model is solid: in comparative trials (APROCER farm), Duroc-Jersey genetics show a 10.8% increase in average daily gain, 9.4% higher slaughter weight at 168 days, mortality cut from 6% to 3%, and better color, marbling, firmness and post-mortem pH. In cured meats, salami weight loss falls from 20% (traditional recipes with beef) to 5% when made entirely with Duroc-Jersey pork.
The project has two complementary phases. Phase 1, consolidation in Oncativo (6 months): training for farmers and charcuterie makers on the breed's meat qualities, carcass quality analysis, 200 doses of Duroc-Jersey semen (supplier: GenPorc/Canadian Genetics), artificial insemination training, training in premium charcuterie production (Coniglio&Cabarero), presence at local and Buenos Aires trade shows, a 360° communications plan (video, print and paid media), coverage on Agroverdad, Canal 6 Oncativo and Mitre Córdoba, and blockchain traceability via Capa-Zeta. Phase 2, province-wide rollout (months 7–12): transferring the model to 125 sows on model farms in northern and southern Córdoba, with training for 5 + 5 local farmers.
